Forget everything you think you know about plant-based cuisine: FIELDS<\/strong>, Ren\u00e9 Mathieu<\/b>‘s new restaurant, is a poetic ode to living things. As soon as you arrive, the setting immerses you in a natural, hushed atmosphere. Rough wood, soft lighting, enveloping calm: every detail invites contemplation. The service, discreet but passionate, is in the image of its chef: human, sincere and deeply committed.<\/g> <\/p>

Ren\u00e9 Mathieu<\/b> is a major figure in contemporary plant-based cuisine. If you’ve been following me, you’ll know that I’ve already had the chance to try out his former restaurant, La Distillerie<\/g><\/g>, which was voted the best plant-based restaurant in the world. <\/p>

His strength? Being both an outstanding technician and a storyteller.

The chef is committed to sustainable gastronomy. Seasonal and local produce are given pride of place <\/p>

I had no qualms about trying out Chef Ren\u00e9 Mathieu’<\/strong>s new restaurant. As always, the menu was PERFECT<\/g>. The lunch menu is a great introduction to the cuisine of Chef<\/g> Ren\u00e9 Mathieu<\/g>.

The price\/quality ratio for the lunch menu is really very good, at \u20ac85. <\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t
