A 100% vegetarian menu tested in Paris, France. <\/strong><\/p>

Located at the corner of Rue Montcalm and Rue du P\u00f4le Nord, Le Bor\u00e9al <\/strong>has elegantly settled in Paris’s 18th arrondissement. A name that evokes the north, a discreet location, and cuisine that leaves a mark. <\/p>

From the moment you enter, you’re charmed by the typical Parisian atmosphere<\/strong>: glass fa\u00e7ade, brass counter, soft lighting, and an intimate ambience. You feel truly at ease.<\/strong> The team is friendly and attentive to guests. <\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t

In the kitchen, a duo united in life and work<\/span>: Philippine Jaillet<\/strong> and Charles Neyers<\/strong>.<\/p>

Two complementary personalities<\/strong> bring a distinctive energy to the table. Philippine<\/strong>, who trained at Pierre Herm\u00e9 and Taillevent, brings precision, attention to detail, and a real talent for delicate pairings. Charles<\/strong>, self-taught, has built his culinary culture between street food and gastronomy. Together, they offer creative, easily understandable, and deeply personal cuisine. <\/p>

They were both contestants on the famous T<\/strong>op Chef <\/b>show, where they progressively revealed a strong culinary identity and a keen interest in plant-based cuisine\u2014something that immediately intrigued me about them.
<\/strong><\/p>

Le Bor\u00e9al <\/strong>offers two five-course tasting menus at \u20ac88 each (an omnivore menu and a vegetarian one).<\/p>

And it’s the latter that captured my full attention.<\/p>

All too often, the vegetarian menu<\/b> is a pared-down version of the main menu. Here, it’s quite the opposite: plant-based cooking is designed for what it is, with logic, surprising<\/strong> pairings<\/strong>, controlled cooking<\/strong>, and freshness<\/strong>\u2014especially appreciated in hot weather. <\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t

I was blown away by the creativity of the dishes and their harmony of flavors. One standout example: butter beans<\/strong> served with white miso,<\/strong> vanilla<\/strong>, and cherries<\/strong>\u2014a pairing you\u2019d never dare to imagine\u2026 and yet it works wonderfully. <\/p>

But the dish that impressed me most was the cr\u00e8me br\u00fbl\u00e9e tart with vin jaune<\/strong> and Jura cheeses<\/strong>. I admit I was very skeptical at first\u2014cr\u00e8me br\u00fbl\u00e9e, vin jaune, cheese\u2026 really?\u2014but it was absolutely brilliant. An unexpected gustatory kick<\/strong>, halfway between a main dish and a pre-dessert. The balance and surprise were spot-on. <\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t

Beyond the plate, the service deserves praise: a team that listens<\/strong>, is attentive without being intrusive, and shows real attention to detail. The experience is thoughtful and polished from start to finish<\/strong>.<\/p>

At \u20ac88 for a five-course menu, the value for money is excellent<\/strong>\u2014especially for a restaurant led by two former Top Chef <\/strong>contestants, where the promise of high standards is fully delivered\u2014without any fuss.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t
