A 100% vegetarian menu tested in Liege
There are moments when you’re not necessarily looking for a spectacular experience, but rather comfort, warmth, and gentleness. In the heart of winter, as the cold settles in, I simply wanted to be somewhere welcoming and sincere—somewhere you feel good. That’s exactly what I found at Sophie et Nicolas.
A clear, committed philosophy
Beyond the atmosphere, what really stood out to me was the restaurant’s approach:
working with local producers,
no additives,
a seasonal, ever-evolving menu,
and a whole-product approach, using each ingredient in its entirety.
A true embrace of plant-based cooking
Even though the restaurant doesn’t yet offer a dedicated vegetarian menu on the regular à la carte, I was surprised by how present plant-based dishes already are. You do need to request the vegetarian menu in advance, which I did.
I tried the five-course menu in its vegetarian version, and the experience was genuinely convincing. The plates offer bold, sometimes unexpected pairings, yet they’re always balanced and well executed, with real care given to the ingredients.
Highlights included:
glazed celeriac with coffee kombucha, served with pickled girolles and a smoky cream, lifted with a hint of cocoa and chili,
the pairing of roasted beetroot and fermented cherry, precise and beautifully balanced,
and the thoughtful take on often-overlooked vegetables, like Brussels sprouts handled here with real finesse.

Attentive service and a seamless experience
Throughout the meal, the team is available, attentive, and genuinely kind without ever feeling intrusive. You feel looked after and listened to, and above all at ease, which plays a big part in the overall quality of the experience.
A special mention for the half wine pairing option. It’s an excellent way to explore the full selection while keeping things light. The pairings are spot-on and coherent, subtly enhancing each dish without ever taking over.

Because it’s a table where plant-based cuisine is gradually finding its place. There’s a real commitment here: the restaurant offers thoughtful cooking and most importantly, the flavors are truly there. A feel-good address that clearly deserves to be followed as it evolves.
