Some meals are memorable, not just because they’re delicious – but because they resonate with something bigger: a vision, a demand, a commitment. That’s exactly what I felt with Archibald De Prince, René Mathieu’s former sous-chef at La Distillerie, who opened his own restaurant in November 2024.
Awarded a Michelin star in April, this new restaurant offers a gourmet vegetarian menu as ambitious as its classic menus. A rare place, at the crossroads of culinary excellence and environmental awareness.

The plant-based menu is just right. The combination of flavours is JUST right. It’s a menu that lets you rediscover the taste of certain vegetables, such as carrots, which are sublimely delicious.
Two 14-course menus are available, an omnivorous menu and a vegetarian menu (which can be either vegetarian or vegan).
