FIELDS: plant immersion at the top!

Forget everything you think you know about plant-based cuisine: FIELDS, René Mathieu‘s new restaurant, is a poetic ode to living things. As soon as you arrive, the setting immerses you in a natural, hushed atmosphere. Rough wood, soft lighting, enveloping calm: every detail invites contemplation. The service, discreet but passionate, is in the image of its chef: human, sincere and deeply committed.

René Mathieu is a major figure in contemporary plant-based cuisine. If you’ve been following me, you’ll know that I’ve already had the chance to try out his former restaurant, La Distillerie, which was voted the best plant-based restaurant in the world.

His strength? Being both an outstanding technician and a storyteller.
He comes personally to your table to present the products and tell you about their origin, their season and their message.

Eau sauvage – Ortie, verveine, berce
My Roots – Arbre à malice, pesto d’herbes sauvages

EN ATTENDANT, ON DEGUSTE

Les orties – Velouté, fleurs sauvages, aquafaba fumée
Une illusion – Raviole aliaire, épiaire, plantain, lamier
Cueillette sauvage – Feuille de consoude, fleurs et herbes

IMMERSION VEGETALE

Réveil du jardin – Légumes verts au barbecue, ail des ours, menthe, jus fermenté
Saisonnalité – Asperges, morilles, rhubarbe, pommade à l’aspérule
Butinement printanier – Comme un œuf à la coque, miel, fleurs, infusion menthe/chocolat
Douceurs – Parfums de notre environnement, fruits, légumes, fleurs

Chaque plat est composé comme un tableau. Chaque assiette, une promesse tenue : le végétal peut être spectaculaire.

The chef is committed to sustainable gastronomy. Seasonal and local produce are given pride of place

I had no qualms about trying out Chef René Mathieu’s new restaurant. As always, the menu was PERFECT. The lunch menu is a great introduction to the cuisine of Chef René Mathieu.

The price/quality ratio for the lunch menu is really very good, at €85.

To sum up: it’s a real favourite!

Areas for improvement: none whatsoever! I’ve rediscovered the cuisine I love so much from Chef René Mathieu. Creative, ethical and sensitive. A real break from the daily grind.
