As soon as you arrive, the setting immerses you in a natural, hushed atmosphere. Rough wood, soft lighting, enveloping calm: every detail invites contemplation. A lunch in several acts, punctuated by the surprises of nature, entirely plant-based, local and seasonal:

Eau sauvage – Ortie, verveine, berce
My Roots – Arbre à malice, pesto d’herbes sauvages
EN ATTENDANT, ON DEGUSTE
Les orties – Velouté, fleurs sauvages, aquafaba fumée
Une illusion – Raviole aliaire, épiaire, plantain, lamier
Cueillette sauvage – Feuille de consoude, fleurs et herbes
IMMERSION VEGETALE
Réveil du jardin – Légumes verts au barbecue, ail des ours, menthe, jus fermenté
Saisonnalité – Asperges, morilles, rhubarbe, pommade à l’aspérule
Butinement printanier – Comme un œuf à la coque, miel, fleurs, infusion menthe/chocolat

To sum up: it’s a real favourite!
Areas for improvement: none whatsoever! I’ve rediscovered the cuisine I love so much from Chef René Mathieu. Creative, ethical and sensitive. A real break from the daily grind.
