Le FIEF - Fait Ici en France: a gourmet restaurant where the notion of "local" takes on its full meaning!
After running the Paris Marathon, my man wanted to surprise me with a new nugget: FIEF. What’s FIEF? it’s the acronym for “Fait Ici en France” and it’s above all the restaurant of chef Victor Mercier, finalist in top chef 2018.
Open since 2019, awarded1 Michelin star in March 2022 and 2 toques at Gault et Millau, FIEF stands out for its commitment to the environment!
A fine position to take, since no ingredients are imported!
Coffee is replaced by “cafief”, a blend of buckwheat, barley and chicory, and all cocktails are made with spirits made in France. Unfortunately, I didn’t get the chance to try this, but I’ll be sure to do so next time!
On the other hand, I was able to try out the wine list, and there’s a great selection of organic wines at affordable prices!
And what does it look like on the plate?
Before talking about the food, let’s talk about the setting. I loved this warm, intimate, cosy place, and felt right at home from the moment I arrived. Before settling in at the back of the room, we passed the open kitchen. It’s even possible to reserve a seat at the counter and enjoy the culinary show.
Chef Victor Mercier offers 3 menus:
- the first at the guest counter (9 places available) – 165€. However, this menu is not suitable for vegans/vegetarians.
- 5-course conscious omnivore menu €95
- the 5-course vegan menu – 85€ – a 100% vegan menu

"Nothing out of France... No coffee or chocolate, just local finds!"
In this vegan menu, I was surprised to discover Japanese influences, given that all the ingredients are French! Personally, I thought it was great to be able to stay true to the made in France style and, at the same time, show that it’s possible to shake things up!
I was more than pleasantly surprised by this 100% vegan menu. I was a bit dubious at first, as I’d already tried a restaurant in Alsace that offered 100% French cuisine, but I hadn’t been seduced at all.
Here at FIEF, chef Victor Mercier has put the spotlight on quality and tasteful vegetal cuisine! I fell in love with the mushroom dumpling! I also loved the lemon/fennel and black olive combination, as well as the strawberry/pea. The idea of offering a plant-based dessert won me over!

To sum up: A fine gourmet restaurant offering a truly vegan menu that goes hand in hand with the restaurant’s commitment!
Areas for improvement: It’s not easy to come up with areas for improvement, perhaps in the way certain dishes are presented.
